refactor: rename CloudEvents extension attributes hub* → central*

Rename extension attributes for consistency with project naming:
- hubschemaversion → centralschemaversion
- hubcategory → centralcategory
- hubseverity → centralseverity

Non-breaking change - no consumers depend on these names yet.
